Sourdough Bread

Starter batter: 1 package active dry yeast in 1/2 c lukewarm water.  Stir in 2 c lukewarm water, 2 c sifted flour and 1 Tbsp each of sugar and salt.  Beat till smooth.  Let stand 3-5 days uncovered.  (stire 2-3 times aday), cover at night.  Should have a “yeasty, not sour smell).

To make bread:

Soften 1 pack active dry yeast in 1 1/2c warm water.  Blend in 1 c starter batter.  Add 4 c flour, 2 tsp salt and 2 tsp sugar.  Beat 4 minutes.  Let dough rise double in size.  Mix 1/2 tsp soda with 2 c four–stir into dough.  Add enough more flour to make stiff dough.  Knead 8-10 minutes.  Divide into 2 portions into greased bread pans.  Let rise double.  Brush surface just before baking with water. Place a shallow pan of water on bottm rack.  Cook bread on middle rack.  400F  35-40min
